Hmmm...this could be a trick question.

I'll say that #1 is blood. I couldn't tell if #2 had "coffee grounds" in it, so I am going to guess it's either bile or blood, maybe both. #3, I'll guess that it's blood.

*Oh please let me get them right, and not look stupid. ;-)*
